Description

This crustless vegetable quiche is easy, healthy, and packed with colorful veggies. Perfect for breakfast, brunch, or a light dinner—no crust required!


Ingredients

  • 4 large eggs
  • ½ cup milk
  • ½ cup zucchini, diced
  • ½ cup red bell pepper, diced
  • ½ cup spinach, chopped
  • ¼ cup shredded mozzarella
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a small baking dish.
  2. In a medium bowl, whisk together eggs, milk, salt, and pepper.
  3. Stir in zucchini, red bell pepper, spinach, and half the cheese.
  4. Pour the mixture into the prepared dish and sprinkle remaining cheese on top.
  5. Bake for 25–30 minutes, or until set and golden.
  6. Let cool for 5 minutes before slicing and serving.

Notes
