French Onion Meatloaf

Meatloaf Mixture

  • 2 lbs ground beef (80/20 blend)
  • 1 packet Lipton French Onion Soup Mix
  • 2 large onions, caramelized
  • ¾ cup breadcrumbs (or panko)
  • 2 eggs
  • ½ cup milk or beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • ½ tsp black pepper

Glaze

  • ½ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • ½ tsp Dijon mustard

Instructions

1️⃣ Preheat & Prep:

  • Preheat oven to 375°F (190°C).
  • Grease a loaf pan or line a baking dish with parchment paper.

2️⃣ Caramelize Onions:

  • Slice onions thinly and cook in a pan with 1 tbsp butter over medium-low heat for 30-40 minutes, stirring occasionally until golden brown.

3️⃣ Mix Ingredients:

  • In a large bowl, combine ground beef, French Onion Soup Mix, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, and black pepper.
  • Fold in cooled caramelized onions and mix until just combined.

4️⃣ Shape & Bake:

  • Shape the meatloaf mixture into a loaf and place it in the baking dish.
  • Bake for 40 minutes.

5️⃣ Apply Glaze & Finish Baking:

  • In a bowl, mix ketchup, Worcestershire sauce, brown sugar, and Dijon mustard.
  • Brush over the meatloaf and bake for an additional 15 minutes until the glaze caramelizes.

6️⃣ Rest & Serve:

  • Remove from the oven and let it rest for 10 minutes before slicing.

Notes

For a leaner option: Swap ground beef for turkey and add extra broth for moisture.
For a gluten-free version: Use almond flour instead of breadcrumbs.
For an extra juicy texture: Avoid overmixing the meat.
