Meatloaf Mixture
- 2 lbs ground beef (80/20 blend)
- 1 packet Lipton French Onion Soup Mix
- 2 large onions, caramelized
- ¾ cup breadcrumbs (or panko)
- 2 eggs
- ½ cup milk or beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- ½ tsp black pepper
Glaze
- ½ cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- ½ tsp Dijon mustard
Instructions
1️⃣ Preheat & Prep:
- Preheat oven to 375°F (190°C).
- Grease a loaf pan or line a baking dish with parchment paper.
2️⃣ Caramelize Onions:
- Slice onions thinly and cook in a pan with 1 tbsp butter over medium-low heat for 30-40 minutes, stirring occasionally until golden brown.
3️⃣ Mix Ingredients:
- In a large bowl, combine ground beef, French Onion Soup Mix, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, and black pepper.
- Fold in cooled caramelized onions and mix until just combined.
4️⃣ Shape & Bake:
- Shape the meatloaf mixture into a loaf and place it in the baking dish.
- Bake for 40 minutes.
5️⃣ Apply Glaze & Finish Baking:
- In a bowl, mix ketchup, Worcestershire sauce, brown sugar, and Dijon mustard.
- Brush over the meatloaf and bake for an additional 15 minutes until the glaze caramelizes.
6️⃣ Rest & Serve:
- Remove from the oven and let it rest for 10 minutes before slicing.

✔ For a leaner option: Swap ground beef for turkey and add extra broth for moisture.
✔ For a gluten-free version: Use almond flour instead of breadcrumbs.
✔ For an extra juicy texture: Avoid overmixing the meat.
